Here’s a recipe to get you in the festive spirit.
Packed full of ingredients that give you a natural lift (even if you opt out of the optional rum!) we think it’s the most delicious, superfood eggnog you will ever try. Serves 4.
1 Place the cashews in a bowl and cover completely with boiling water, allow to soak for at least 30 minutes.
2 Drain and rinse the cashews, then place in a high-speed blender
3 Add in the remaining ingredients and blend on high again for another two minutes, or until the dates are completely blended
4 Finish off with grated nutmeg
Enjoy cold or warm, refrigerate any excess and consume within a few days.
